21st Century Cuisine, Nutrition and Genetics

As part of their Distinguished International Speaker Series, the Dashew Center for International Students and Scholars welcomes Dr. Richard Delerins as he discusses cuisine and how it relates to our environment and culture in the 21st century.

Dr. Richard Delerins will explore the challenges of 21st century cuisine, including preserving the environment and culinary traditions, feeding our genes (nutrigenomics) and our taste buds. He will present recipes from: paleo-cuisine, medieval cuisine, the Mediterranean diet, the Okinawa diet, sustainable cuisines, the APOE Gene Diet and molecular gastronomy.

Cost: Free and open to the public.
